Chicken and Cheese Skewers

Ingredients

  • 500 grams of chicken breast
  • 200 grams of hard cheese (for example, sweet provolone or caciocavallo), cut into cubes
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Aromatic herbs as desired (for example, rosemary, thyme, oregano)
  • Wooden or metal skewers

Italian Option: Marinate the chicken with an emulsion of extra virgin olive oil, lemon juice, a pinch of salt and pepper, and add a mixture of Italian aromatic herbs like rosemary and sage.

Preparation

  1. Cut the chicken breast into cubes of about 3 cm per side.
  2. Skewer onto each stick alternating between a cube of chicken and a cube of cheese. If you are using wooden skewers, remember to soak them in water before use, to prevent them from burning on the grill.
  3. Prepare a marinade by mixing extra virgin olive oil with salt, pepper, and chopped aromatic herbs. Brush this mixture onto the skewers.
  4. Heat a grill or a grill pan over the fire. When it is hot, lay the skewers on it.
  5. Cook for about 3-4 minutes per side, turning them gently to ensure even cooking and to allow the cheese to melt slightly without completely running out.
  6. Once the chicken is golden and cooked evenly, remove the skewers from the grill and serve them hot.
