Chicken and Avocado Salad

The chicken and avocado salad is a fresh and nutritious dish, perfect for a light and tasty meal. Here’s the recipe:

Ingredients

  • 2 cooked chicken breasts, cut into strips (you can also use leftover grilled or roasted chicken)
  • 2 ripe avocados, diced
  • 150 g of cherry tomatoes, halved
  • 1 cucumber, diced
  • Lettuce leaves or a mix of salad greens to taste
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Extra virgin olive oil
  • A pinch of chili pepper (optional)
  • Any aromatic herbs to taste (basil, cilantro, parsley)

Preparation

  1. Start with preparing the chicken. If you don’t have pre-cooked chicken, cook the chicken breasts in a pan with a bit of oil, salt, and pepper until they are golden brown and cooked through. Let it cool then cut into strips.
  2. Take a large enough bowl to contain all the ingredients. Add the selected salad greens, cherry tomatoes, cucumber, and chicken.
  3. Cut the avocados in half, remove the pit, and with the help of a spoon, extract the flesh from the skins and cut it into cubes. Sprinkle the avocado cubes with some lemon juice to prevent oxidation and add them to the bowl.
  4. Dress the salad with the remaining lemon juice, salt, pepper, chili pepper (if you like a bit of spice), and a generous drizzle of extra virgin olive oil.
  5. Gently mix the salad to ensure all ingredients blend well without breaking the avocado pieces.
  6. If you have aromatic herbs, chop them and sprinkle over the salad before serving for an additional touch of freshness.

Curiosity

The avocado is a fruit of Central American origin that is greatly loved in international cuisine for its creamy texture and beneficial fats. In recent years, it has become widely used in Italian cuisine, especially in fresh dishes such as salads and tartare.

If you want an Italian twist to this recipe, you can add fresh basil and perhaps some Parmesan shavings for an extra touch of flavor.
