Biscuits with Chia Seeds

Ingredients

  • 1 cup of whole wheat flour (or type 00 flour if you prefer)
  • 1/2 cup of chia seeds
  • 1/2 cup of brown sugar
  • 1/3 cup of extra virgin olive oil
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt

Preparation

  1. In a large bowl, mix together the flour, chia seeds, brown sugar, baking powder, and salt.
  2. In another bowl, whisk the egg and then add the extra virgin olive oil and the vanilla extract.
  3. Combine the two mixtures, stirring until you have a uniform dough.
  4. Cover the bowl with plastic wrap and let the dough rest in the refrigerator for about 30 minutes.
  5. Preheat the oven to 180 °C (356 °F) and prepare a baking sheet by lining it with parchment paper.
  6. Take the dough out of the refrigerator and form small balls, then slightly flatten them to shape the biscuits.
  7. Place the biscuits on the baking sheet, leaving some space between each one.
  8. Bake for about 10-15 minutes or until the edges begin to turn golden.
  9. Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes, then transfer them to a rack to cool completely.
