Biscuits with Chia Seeds
17/11/2023Biscuits with chia seeds are a perfect choice for a healthy and energetic snack. Here’s a version enriched with an Italian touch through the use of extra virgin olive oil, which will give the biscuits a unique flavour note.
Ingredients
- 1 cup of whole wheat flour (or type 00 flour if you prefer)
- 1/2 cup of chia seeds
- 1/2 cup of brown sugar
- 1/3 cup of extra virgin olive oil
- 1 egg
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
Preparation
- In a large bowl, mix together the flour, chia seeds, brown sugar, baking powder, and salt.
- In another bowl, whisk the egg and then add the extra virgin olive oil and the vanilla extract.
- Combine the two mixtures, stirring until you have a uniform dough.
- Cover the bowl with plastic wrap and let the dough rest in the refrigerator for about 30 minutes.
- Preheat the oven to 180 °C (356 °F) and prepare a baking sheet by lining it with parchment paper.
- Take the dough out of the refrigerator and form small balls, then slightly flatten them to shape the biscuits.
- Place the biscuits on the baking sheet, leaving some space between each one.
- Bake for about 10-15 minutes or until the edges begin to turn golden.
- Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes, then transfer them to a rack to cool completely.
