Castagnotti

Castagnotti are soft cookies typical of Italian cuisine, predominantly made with chestnut flour. Here is the recipe:

Ingredients

  • 200 g of chestnut flour
  • 100 g of sugar
  • 50 g of butter
  • 1 egg
  • 50 g of pine nuts
  • 50 g of raisins
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • Milk (enough to knead)
  • Powdered sugar (for decorating)

Preparation

  1. In a bowl, sift the chestnut flour with the baking powder and a pinch of salt.
  2. Add the sugar and mix.
  3. Melt the butter and let it cool.
  4. Incorporate the melted butter, egg into the flour and sugar mixture, and mix to obtain a homogeneous dough.
  5. If the dough is too dry, add a little milk to reach a workable consistency.
  6. Add the pine nuts and raisins previously soaked in hot water and well-drained.
  7. Form walnut-sized balls and slightly flatten them, giving them the typical shape of castagnotti.
  8. Preheat the oven to 180 °C and line a baking tray with parchment paper.
  9. Place the castagnotti on the tray and bake for about 15-20 minutes or until the cookies are lightly golden.
  10. Once baked, let them cool and dust them with powdered sugar before serving.

Castagnotti are perfect to be enjoyed with coffee or tea. They are an excellent way to savor autumn flavors, thanks to the use of chestnut flour. Enjoy your meal!
