For the ravioli dough:
- 300 g of soft wheat flour
- 100 g of chestnut flour
- 3 eggs
- Salt to taste

- 200 g of cooked chestnuts (you can use canned ones if you don’t have fresh chestnuts)
- 150 g of fresh sausage
- 50 g of grated Parmesan cheese
- 1 clove of garlic
- Rosemary to taste
- Salt and pepper to taste

- Butter to taste
- Sage to taste
- Grated Parmesan cheese for sprinkling

Prepare the ravioli dough by mixing the flours with the eggs and a pinch of salt. Knead until you have a smooth dough, then let it rest for about 30 minutes, covered with a clean cloth.

In the meantime, prepare the filling by crumbling the sausage and sautéing it in a pan with a drizzle of oil, minced garlic, and a bit of rosemary. Once cooked, remove the garlic and let the sausage cool down.

In a bowl, combine the chopped chestnuts, the cooled sausage, the Parmesan, and season with salt and pepper to your liking. Work until you obtain a homogeneous mixture.

Roll out the ravioli dough into thin sheets and place small portions of filling at regular intervals on the dough.

Cover with another sheet of dough and cut the ravioli using a pasta cutter or ravioli mold, making sure to seal the edges well.

Cook the ravioli in plenty of salted water for about 3-4 minutes or until they float to the surface.

Meanwhile, in a pan, melt some butter with a few sage leaves.

Gently drain the ravioli and dress them in the melted sage butter, then sprinkle with grated Parmesan cheese before serving.
