Chestnut and Pear Muffins

Chestnut and pear muffins are a delightful combination of autumnal and winter flavors, perfect for a hearty snack or breakfast. Here is how to make them:

Ingredients

  • 200 g of chestnut flour
  • 100 g of all-purpose flour
  • 100 g of sugar
  • 80 ml of seed oil or melted butter
  • 1 ripe pear
  • 2 eggs
  • 120 ml of milk
  • 1 packet of baking powder for sweets
  • A pinch of salt
  • Vanilla essence to taste (optional)
  • Icing sugar for decorating (optional)

Preparation

  1. Preheat the oven to 180°C (350°F) and prepare a muffin tin with liners.
  2. In a large bowl, mix together the flours, sugar, baking powder, and a pinch of salt.
  3. In another bowl, beat the eggs with the milk, seed oil or melted butter, and vanilla essence.
  4. Peel and cut the pear into small pieces (if you prefer a more intense pear flavor, you can also grate it).
  5. Add the liquid ingredients to the dry ingredients mix and stir until you have a homogeneous mixture. Add the pear pieces and gently mix.
  6. Fill the muffin cups 2/3 with the batter.
  7. Bake in the oven for about 20-25 minutes or until the muffins are well risen and golden. Use the toothpick test to make sure they are cooked in the center.
  8. Let the muffins cool before removing them from the tins.
  9. Once cooled, you can dust them with icing sugar for a more elegant presentation.
