Chess Tiramisu

The Chess Tiramisu is a fun and visually enchanting variation of the classic tiramisu. Here’s how to prepare it:

Ingredients

  • 500g of mascarpone
  • 4 very fresh eggs (with yolks and whites separated)
  • 100g of sugar
  • 300g of ladyfingers
  • Espresso coffee as needed
  • Unsweetened cocoa powder as needed
  • 1 pinch of salt

Preparation

  1. Start by preparing a strong espresso coffee and let it cool down.

  2. In the meantime, separate the yolks from the whites of the eggs. With an electric mixer or by hand, whip the yolks with the sugar until you achieve a frothy and light mixture.

  3. Add the mascarpone to the whipped yolks and gently mix until you have a smooth mixture.

  4. In another bowl, beat the egg whites until stiff peaks form with a pinch of salt. Gently fold them into the mascarpone mixture to avoid deflating them, thus obtaining the tiramisu cream.

  5. Now that you have the cream ready, you can proceed to form the Chess Tiramisu. To do this, quickly dip the ladyfingers in the cold coffee and begin to arrange them in a tray, alternating the orientation of each biscuit to create a checkerboard effect. For example, if the first ladyfinger is positioned vertically, the second will be horizontal.

  6. After creating the first layer of ladyfingers, spread a layer of the mascarpone cream over them, leveling well.

  7. Repeat the process forming a second layer of coffee-dipped ladyfingers arranged alternately compared to the first layer to maintain the checkerboard effect.

  8. Cover with the rest of the mascarpone cream and level it.

  9. Put the Chess Tiramisu in the refrigerator for at least 3-4 hours before serving. Before serving, use a sieve to dust the surface with unsweetened cocoa powder.
