Cherry Tiramisu

Cherry Tiramisu is a delicious variation of the classic tiramisu that combines the sweetness and acidity of cherries with the creaminess of mascarpone. Here is the recipe with an Italian touch:

Ingredients

  • 500g of fresh cherries
  • 250g of mascarpone
  • 3 eggs (with whites and yolks separated)
  • 80g of granulated sugar
  • 1 package of ladyfingers
  • 1 shot glass of Maraschino or Amaretto di Saronno (optional)
  • A few drops of lemon juice
  • Unsweetened cocoa powder for dusting

Preparation

  1. Wash and pit the cherries. Set some aside for the final decoration and cut the rest in half or into quarters, then marinate them in Maraschino or Amaretto with a few drops of lemon juice.

  2. Separate the yolks from the whites. In a bowl, whisk the yolks with the sugar until the mixture is frothy and pale.

  3. Incorporate the mascarpone into the whisked yolks and fold gently until you have a smooth cream.

  4. In another bowl, whip the egg whites into stiff peaks and fold them gently into the mascarpone cream, using a spatula and movements from the bottom up to avoid deflating them.

  5. Take a baking dish and arrange a layer of ladyfingers slightly soaked in the cherry marinating liquid. Do not soak them too much to prevent breaking.

  6. Spread a layer of the mascarpone cream and a layer of cherries on top. Repeat the process until all ingredients are used up, finishing with a layer of cream.

  7. Cover with plastic wrap and let it rest in the refrigerator for at least 4 hours, but if possible, prepare it the evening for the next day.

  8. Before serving, decorate with the whole cherries set aside and dust with unsweetened cocoa powder.
