Sour Cherry Biscuits

Sour cherry biscuits are delicious and quite simple to prepare. Here’s how you can make these treats, perfect for breakfast or a snack.

Ingredients

  • 300 g of 00 flour
  • 100 g of sugar
  • 100 g of soft butter
  • 1 egg
  • 1 teaspoon of baking powder for sweets
  • A pinch of salt
  • Grated zest of 1 (untreated) lemon
  • Sour cherries in syrup (about 20-30, depending on the size)
  • Icing sugar (for dusting, optional)

Preparation

  1. In a large bowl, sift the flour with the baking powder and salt.
  2. Add the sugar, the grated lemon zest, and mix.
  3. Make a well in the center of the dry ingredients and add the egg and the soft butter in pieces.
  4. Work the dough first with a fork incorporating the wet ingredients with the dry ones, then knead with your hands until you have a smooth and homogeneous mixture.
  5. Form a ball, wrap it in cling film, and let it rest in the refrigerator for about 30 minutes.
  6. In the meantime, drain the sour cherries from the syrup and leave them on a sheet of paper towel to remove excess moisture.
  7. Preheat the oven to 180 °C.
  8. Take the dough out of the refrigerator and roll it out with a rolling pin on a lightly floured surface to a thickness of about 5 mm.
  9. Use a round cookie cutter (or a glass) to cut out the biscuits and place them on a baking tray lined with parchment paper.
  10. Place a sour cherry in the center of each biscuit and press lightly to fix it to the dough.
  11. Bake the biscuits for about 15-20 minutes or until they are slightly golden.
  12. Let the biscuits cool before removing them from the tray and, if desired, dust them with icing sugar before serving.

Sour cherries are a variety of cherry with a tart flavor and are widely used in Italian pastry, especially in the central regions of Italy such as Marche, where the production of sour cherries is very wide-spread. The use of sour cherries in desserts offers a pleasant contrast of flavors.
