Sour Cherry Biscuits
17/11/2023Sour cherry biscuits are delicious and quite simple to prepare. Here’s how you can make these treats, perfect for breakfast or a snack.
Ingredients
- 300 g of 00 flour
- 100 g of sugar
- 100 g of soft butter
- 1 egg
- 1 teaspoon of baking powder for sweets
- A pinch of salt
- Grated zest of 1 (untreated) lemon
- Sour cherries in syrup (about 20-30, depending on the size)
- Icing sugar (for dusting, optional)
Preparation
- In a large bowl, sift the flour with the baking powder and salt.
- Add the sugar, the grated lemon zest, and mix.
- Make a well in the center of the dry ingredients and add the egg and the soft butter in pieces.
- Work the dough first with a fork incorporating the wet ingredients with the dry ones, then knead with your hands until you have a smooth and homogeneous mixture.
- Form a ball, wrap it in cling film, and let it rest in the refrigerator for about 30 minutes.
- In the meantime, drain the sour cherries from the syrup and leave them on a sheet of paper towel to remove excess moisture.
- Preheat the oven to 180 °C.
- Take the dough out of the refrigerator and roll it out with a rolling pin on a lightly floured surface to a thickness of about 5 mm.
- Use a round cookie cutter (or a glass) to cut out the biscuits and place them on a baking tray lined with parchment paper.
- Place a sour cherry in the center of each biscuit and press lightly to fix it to the dough.
- Bake the biscuits for about 15-20 minutes or until they are slightly golden.
- Let the biscuits cool before removing them from the tray and, if desired, dust them with icing sugar before serving.

Sour cherries are a variety of cherry with a tart flavor and are widely used in Italian pastry, especially in the central regions of Italy such as Marche, where the production of sour cherries is very wide-spread. The use of sour cherries in desserts offers a pleasant contrast of flavors.
