Cherry Cake

Cherry cake is a delicious dessert, perfect when these juicy red gems are in season. Here is an Italian version of this delightful cake.

Ingredients

  • 500 g of fresh, pitted cherries
  • 200 g of all-purpose flour
  • 150 g of granulated sugar
  • 100 g of melted butter
  • 3 eggs
  • 1 sachet of baking powder
  • 1 pinch of salt
  • Powdered sugar (for decoration)

Preparation

  1. Start by preheating the oven to 180 °C and prepare a cake pan by buttering and flouring it, or lining it with parchment paper.
  2. In a bowl, beat the eggs with the sugar until you get a light and frothy mixture.
  3. Incorporate the cooled melted butter, mixing well.
  4. Sift the flour with the baking powder and a pinch of salt, then mix these dry ingredients into the egg and sugar mixture, stirring gently until you obtain a uniform batter.
  5. Distribute half of the pitted cherries at the bottom of the pan and pour the cake batter over them.
  6. Place the remaining cherries on the batter, pushing them down slightly to distribute them evenly.
  7. Bake the cake for about 35-40 minutes or until it is golden brown and a toothpick inserted in the center comes out clean.
  8. Let the cherry cake cool on a rack before dusting it with powdered sugar for decoration.
