Cheesecake in a jar

Ingredients

  • 200g of dry biscuits (like Digestive)
  • 100g of melted butter
  • 250g of cream cheese (like Philadelphia)
  • 100g of powdered sugar
  • 1 teaspoon of vanilla extract
  • 200g of fresh cream
  • Fresh fruit or fruit compote for decoration
  • Glass jars with lids

Preparation

  1. Begin by crushing the biscuits until you have fine crumbs. You can use a blender or put the biscuits in a bag and crush them with a rolling pin.
  2. Mix the biscuit crumbs with the melted butter until you obtain a uniform mixture. This will be the crunchy base of your cheesecakes.
  3. Distribute the biscuit mixture into the jars, pressing it down well at the bottom. Put the jars in the fridge for at least 30 minutes, so that the base will firm up.
  4. In the meantime, prepare the cheese cream: in a bowl, mix the cream cheese with the powdered sugar and vanilla extract until you have a smooth mixture without lumps.
  5. In another bowl, whip the fresh cream until it becomes firm and gently fold it into the cheese mixture, trying not to deflate it.
  6. Fill the jars with the cheese cream, leaving a little space at the top for the fruit or compote.
  7. Place the jars in the refrigerator for at least 2 hours before serving, so the cheesecake has time to set.
  8. Before serving, decorate with fresh fruit or with a fruit compote to taste.
