Cheese Pizza

Cheese Pizza is a variant of the classic pizza that highlights the flavor of cheese. If you refer to the Italian version, the base dough is similar to that of traditional pizza; however, a generous amount of various cheeses is added.

Ingredients

  • 500 g of Tipo “00” flour
  • 300 ml of lukewarm water
  • 7 g of fresh brewer’s yeast (or 2.5 g of dry brewer’s yeast)
  • 10 g of salt
  • 30 ml of extra virgin olive oil
  • 300 g of pizza mozzarella, grated or diced
  • 100 g of fontina cheese, sliced or grated
  • 50 g of grated parmesan cheese
  • 100 g of gorgonzola, chopped
  • Tomato sauce as needed
  • Dry oregano as needed (optional)

Preparation

  1. Start by preparing the pizza dough. Dissolve the yeast in lukewarm water.
  2. Mix the flour with salt in a large bowl, then create a well in the middle and add the water with yeast and finally the olive oil.
  3. Knead until you have a smooth and elastic dough. If necessary, add a little flour or water to achieve the desired consistency.
  4. Form a ball with the dough and let it rise in a warm place, covered with a damp cloth, until it doubles in volume (about 1-2 hours).
  5. After rising, roll out the dough on a floured surface to get a disc of the desired diameter, then transfer it onto a lightly greased pizza tray.
  6. Preheat the oven to 250 °C.
  7. Spread a thin layer of tomato sauce over the pizza base, leaving a border uncovered.
  8. Evenly distribute the mozzarella and then the other cheeses: fontina, parmesan, and gorgonzola.
  9. If desired, sprinkle a little dry oregano over the cheeses.
  10. Bake the pizza for about 10-15 minutes or until the edges become golden and the cheese melts and starts to brown slightly.
  11. Remove from the oven and let cool for a few minutes before serving.
