Chantilly Cream

Chantilly cream is a sweet variant of whipped cream, flavored with vanilla and sweetened. It’s perfect for garnishing desserts or accompanying fresh fruit. Here’s how to prepare it:

Ingredients

  • 500 ml of fresh cream to whip
  • 100 g of powdered sugar
  • 1 vanilla bean or vanilla extract to taste

Preparation

  1. Start by placing the bowl and whisks you will use for whipping the cream in the refrigerator for at least half an hour, so they are well chilled.
  2. Pour the fresh cream into the cold bowl.
  3. If you are using a vanilla bean, split it lengthwise and scrape out the seeds inside, then add them to the cream.
  4. If you prefer to use vanilla extract, add it directly to the cream.
  5. Begin to whip the cream with electric beaters at medium speed.
  6. When the cream starts to thicken, gradually add the sifted powdered sugar, continuing to whip.
  7. Whip until the cream is firm and forms soft but stable peaks.
  8. The Chantilly cream is now ready to be used as a garnish or filling for your desserts.

Curiosity

Chantilly cream gets its name from the Château de Chantilly in France, where it is said to have been served for the first time at a banquet. However, some food historians believe it was created by a famous French pastry chef, François Vatel, in the 17th century.

Tips for ensuring the success of the cream:

  • Use cream with a fat content of 30-35% to achieve the best consistency.
  • Make sure the cream is very cold before starting to whip it.
  • Do not overwhip the cream to prevent it from turning into butter.
