Ingredients

  • 200 g of fresh chanterelles
  • 6 eggs
  • 1 clove of garlic
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)
  • Grated cheese to taste (Parmesan or Pecorino, optional)

Preparation

  1. Gently clean the chanterelles with a damp cloth or a brush to remove any soil residue without ruining them. Avoid washing them under running water as they could absorb too much moisture.
  2. In a pan, heat the oil and add the garlic clove. Let it brown to flavor the oil, then remove it and add the chanterelles.
  3. Cook the mushrooms over medium heat for a few minutes until they are slightly golden and all the water has evaporated. If you like, at this point you can add the chopped parsley.
  4. In a bowl, beat the eggs with a pinch of salt and pepper. If you like, you can also add some grated cheese.
  5. Pour the beaten eggs over the chanterelles in the pan. Cook the frittata over medium-low heat for a few minutes, until the edge starts to color and the bottom has set.
  6. With the help of a lid or plate, flip the frittata and cook it on the other side to complete the cooking.
  7. Once ready, transfer the frittata to a plate and serve it hot or at room temperature.
