Croutons with Chanterelles and Gruyère

Here is a recipe to make delicious croutons with chanterelles and Gruyère, perfect for a rustic and flavorful appetizer.

Ingredients

  • 200 g of fresh chanterelles
  • 4 slices of country-style bread
  • 100 g of grated Gruyère cheese
  • 2 cloves of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Carefully clean the chanterelles with a damp cloth to remove any soil residue. Avoid washing them under running water as they would absorb too much liquid.

  2. In a pan, heat a stream of extra virgin olive oil and sauté the garlic cloves until golden. Remove the garlic as soon as it turns golden.

  3. Add the chanterelles to the pan and cook them over medium-high heat for about 5-10 minutes, until they have released their water and begin to brown. During cooking, adjust with salt and pepper.

  4. Meanwhile, toast the bread slices until they become crispy and golden.

  5. Distribute the sautéed mushrooms over each slice of bread and sprinkle with grated Gruyère cheese.

  6. Place the croutons with chanterelles and Gruyère in the oven under the grill for a few minutes, until the cheese has melted and started to brown.

  7. Before serving, garnish the croutons with chopped fresh parsley.

You can enjoy these croutons on their own or accompanied by a nice glass of fresh white wine which will perfectly complement the taste of the appetizer.
