Mushroom Salad

Here is the recipe for a simple and tasty mushroom salad that you can quickly prepare as an appetizer or side dish.

Ingredients

  • 400 g of fresh mushrooms
  • Fresh parsley to taste
  • Juice of 1 lemon
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste (optional)
  • 1 clove of garlic (optional)

Preparation

  1. Clean the mushrooms with a damp cloth or a special brush to remove any soil residue. Avoid washing them under water as they would absorb too much liquid.
  2. Thinly slice the mushrooms and place them in a bowl.
  3. If you decide to use garlic, chop it finely and add it to the mushrooms (you can also crush the garlic clove and leave it whole in the dressing to flavor it, then remove it before serving).
  4. Season with salt, pepper (if you like), extra virgin olive oil, and mix gently.
  5. Add the lemon juice and mix again to distribute the dressing evenly.
  6. Wash, dry, and chop the fresh parsley, then sprinkle it over the salad to add color and freshness before serving.

The acidity of the lemon will prevent the mushrooms from darkening and will add a pleasant contrast to the delicate taste of the fungi. You can serve this salad immediately or let it marinate for a few minutes before serving to intensify the flavors.

Curiosity

Raw mushroom salad is highly appreciated in contemporary Italian cuisine for its freshness and simplicity. If extremely fresh, mushrooms are perfectly edible raw and take on a pleasantly crunchy texture that pairs well with the acidic and aromatic dressing.
