Cauliflower Velouté

Cauliflower velouté is a creamy and comforting dish, perfect for cold days. Here’s how you can prepare it:

Ingredients

  • 1 medium cauliflower
  • 1 large potato
  • 1 white onion
  • 1 clove of garlic
  • Vegetable broth as needed
  • Salt and pepper as needed
  • Extra virgin olive oil
  • Nutmeg (optional)

Preparation

  1. Start by cleaning the cauliflower: remove the outer leaves and cut the florets into small pieces.
  2. Peel and dice the potato into small cubes.
  3. Peel and thinly slice the onion and garlic.
  4. In a large pot, heat a drizzle of olive oil and sauté the onion and garlic until they become translucent.
  5. Add the cauliflower florets and potato cubes, and stir for a few minutes.
  6. Pour in the vegetable broth until it covers the vegetables, season with salt and pepper.
  7. Bring to a boil, then lower the heat and let it cook, covered, for about 20-25 minutes or until the cauliflower and potatoes are soft.
  8. Blend the soup with an immersion blender until you get a velvety consistency.
  9. If desired, you can add a sprinkle of nutmeg to enhance the flavor.
  10. Serve hot with a drizzle of extra virgin olive oil.

Curiosity

Cauliflower velouté can be personalized in many ways. For example, you can enrich it with a touch of cream or milk to make it even creamier, or add aromatic herbs such as thyme or rosemary during cooking for a more intense flavor. Also, you can add a crunchy element by adding croutons toasted in a pan or in the oven.
