Cauliflower Pizza

Cauliflower pizza is a lighter and lower-carb variant compared to traditional pizza with a flour-based dough. Here’s how to make it:

Ingredients

  • 1 head of cauliflower
  • 100 g of grated cheese (such as mozzarella or parmesan)
  • 1 egg
  • Salt, to taste
  • Pepper, to taste
  • Oregano, to taste
  • 2 tablespoons of tomato sauce
  • Toppings as you like (for example: olives, mushrooms, ham, grilled vegetables)

Preparation

  1. Wash the cauliflower and cut it into florets. Use a food processor to reduce it to a sort of ‘cauliflower rice’.
  2. Cook the ‘cauliflower rice’ in the microwave for 7-8 minutes or until it’s soft. You can also steam it until tender.
  3. Once cooked, let it cool down and then squeeze it using a clean cloth to remove excess moisture.
  4. In a bowl, combine the cauliflower with the egg, grated cheese, oregano, salt, and pepper. Mix well until you obtain a homogeneous mixture.
  5. Preheat the oven to 220°C and prepare a baking tray lined with parchment paper.
  6. Spread the cauliflower mixture onto the parchment paper, forming it into a pizza base with an even thickness.
  7. Bake the base for about 15-20 minutes or until the edges are golden and crispy.
  8. Remove the cauliflower base from the oven and add the tomato sauce and your favorite toppings.
  9. Put the pizza back in the oven and bake for another 10-15 minutes or until the cheese is melted and slightly golden.
  10. Take your cauliflower pizza out of the oven and let it rest for a couple of minutes before serving.

Cauliflower pizza has become popular as an alternative to traditional pizza doughs especially among those who follow low-carb diets or who are gluten intolerant (however, make sure that all topping ingredients are gluten-free if absolutely necessary for your diet). Not only is it a healthier version, but it is also a creative way to include more vegetables in your diet.
