Cauliflower Fritters

Cauliflower fritters are a versatile and tasty dish that can be served as an appetizer or a side dish. Here’s how to prepare them.

Ingredients

  • 1 medium cauliflower
  • 2 eggs
  • 120 grams of flour
  • 60 grams of grated Parmesan cheese
  • 1 clove of garlic
  • Fresh parsley to taste
  • Salt to taste
  • Freshly ground black pepper to taste
  • Vegetable oil (for frying)

Preparation

  1. Clean the cauliflower by removing the outer leaves and then cut it into small florets.

  2. Boil the cauliflower florets in a large pot of salted water until they are tender but not falling apart.

  3. Once cooked, drain and let it cool down slightly. After, roughly mash it with a fork or a potato masher to get chunks that are not too fine and will provide texture to the fritters.

  4. In a bowl, beat the eggs with salt and freshly ground black pepper.

  5. Add the mashed cauliflower, flour, grated Parmesan cheese, chopped garlic, and chopped fresh parsley to the bowl. Mix all ingredients well until you obtain a homogeneous mixture.

  6. Heat a generous amount of vegetable oil in a pan and when it’s hot, take spoonfuls of the cauliflower mixture and fry them for a few minutes on each side, until golden and crispy.

  7. Drain them on kitchen paper to remove the excess oil.

Serve the cauliflower fritters hot.

Curiosity

Cauliflower fritters can be customized with additions such as chopped anchovies, capers or olives to give an extra touch of flavor, here’s an Italian variation that can enrich the dish. Moreover, if you want a lighter version, the fritters can be baked in the oven on a baking sheet lined with parchment paper until golden, spraying them with a little oil before baking.
