Cauliflower Flan

Ingredients
- 1 medium cauliflower
- 3 large eggs
- 100 g of grated cheese (parmesan or pecorino)
- 300 ml of béchamel sauce
- Salt and pepper to taste
- Nutmeg (optional)
- Butter for greasing
- Breadcrumbs for dusting
Preparation
- Preheat the oven to 180 °C.
- Clean the cauliflower, break it into florets, and cook it in boiling salted water until soft but not crumbly.
- Drain the cauliflower well and, if you prefer a smoother consistency, mash it with a fork or use a mixer.
- In a large bowl, beat the eggs with the grated cheese, add salt, pepper, and a sprinkle of nutmeg (if you like).
- Combine the cauliflower with the eggs and mix until a smooth mixture is obtained.
- Slowly add the béchamel sauce to the mixture, continuing to stir.
- Butter a baking dish and sprinkle with breadcrumbs, then pour the cauliflower mixture into it.
- Bake the flan for about 30 minutes or until the surface becomes golden brown and crispy.
- Let it rest for a few minutes before serving.
Cauliflower pairs well with different types of cheese, so, in addition to the classic parmesan or pecorino, you could experiment with gorgonzola for a stronger variation or with soft cheeses for a creamier, stringy consistency.
