Cauliflower Flan

I can provide a recipe for a cauliflower flan. This dish can be easily personalized and includes ingredients that are usually easy to find. Here’s a basic Italian recipe:

Ingredients

  • 1 medium cauliflower
  • 3 large eggs
  • 100 g of grated cheese (parmesan or pecorino)
  • 300 ml of béchamel sauce
  • Salt and pepper to taste
  • Nutmeg (optional)
  • Butter for greasing
  • Breadcrumbs for dusting

Preparation

  1. Preheat the oven to 180 °C.
  2. Clean the cauliflower, break it into florets, and cook it in boiling salted water until soft but not crumbly.
  3. Drain the cauliflower well and, if you prefer a smoother consistency, mash it with a fork or use a mixer.
  4. In a large bowl, beat the eggs with the grated cheese, add salt, pepper, and a sprinkle of nutmeg (if you like).
  5. Combine the cauliflower with the eggs and mix until a smooth mixture is obtained.
  6. Slowly add the béchamel sauce to the mixture, continuing to stir.
  7. Butter a baking dish and sprinkle with breadcrumbs, then pour the cauliflower mixture into it.
  8. Bake the flan for about 30 minutes or until the surface becomes golden brown and crispy.
  9. Let it rest for a few minutes before serving.

Cauliflower pairs well with different types of cheese, so, in addition to the classic parmesan or pecorino, you could experiment with gorgonzola for a stronger variation or with soft cheeses for a creamier, stringy consistency.

The cauliflower flan is a versatile dish that can be served as an appetizer or as a side dish in a more substantial meal. Enjoy your meal!
