Ingredients

  • 1 medium cauliflower

Preparation

  1. Start by cleaning the cauliflower, removing the outer leaves and the tough stems. Wash well under running water.

  3. Meanwhile, in a pan, lightly sauté the garlic cloves in olive oil until golden, then remove them.
  4. Once the cauliflower is cooked, drain it and let it cool a bit. Then, mash it with a fork or use a food mill to obtain an almost puree consistency.
  5. Add the mashed cauliflower to the eggs, Parmesan, part of the breadcrumbs, finely chopped parsley, salt, and pepper to taste, and mix well to combine everything.
