Langues de chat

Langues de chat are thin and crunchy biscuits very popular in Italy. Here’s how to prepare them.

Ingredients

  • 100 g of powdered sugar
  • 100 g of soft butter
  • 100 g of flour
  • 3 egg whites
  • 1 pinch of salt
  • Vanilla (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Work the soft butter with the powdered sugar in a bowl until you get a creamy mixture.
  3. Add a pinch of salt and, if you like, a little vanilla to flavor.
  4. Incorporate the egg whites, one at a time, into the butter and sugar mixture, mixing after each addition to blend well.
  5. Add the flour and mix until you get a smooth dough.
  6. Transfer the mixture to a pastry bag with a smooth nozzle (or if you don’t have one available, you can cut the corner off a plastic bag).
  7. On a baking tray lined with parchment paper, squeeze out strips of dough about 7-8 cm long, keeping them well spaced from each other.
  8. Bake in the oven for 5-10 minutes or until the edges start to take on a golden color.
  9. Once baked, remove them from the oven and let them cool before gently peeling them off the parchment paper.

Langues de chat are perfect to enjoy on their own, but also to accompany desserts like mousse, ice cream, or to dip in tea or coffee. Enjoy your preparation!
