Ingredients

  • 320 g of Casarecce pasta
  • 400 g of pumpkin (already cleaned and cut into cubes)
  • 100 g of shelled walnuts
  • 200 g of burrata
  • 1 clove of garlic
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste
  • A handful of chopped parsley (optional)
  • 1/2 glass of white wine (optional for deglazing the pumpkin)

Preparation

  1. First, bring a pot of salted water to a boil for the casarecce.
  2. Meanwhile, in a large skillet, heat some extra virgin olive oil and lightly fry the garlic clove until it is golden, then remove it.
  3. Add the pumpkin cubes to the skillet and cook them over medium-high heat for about 10-15 minutes, until they begin to soften. If you like, you can deglaze with white wine halfway through cooking.
  4. Once the pumpkin is soft and lightly browned, roughly mash some pieces to add creaminess to the sauce. Season with salt and pepper.
  5. In the meantime, in a small skillet, toast the previously chopped walnuts for a few minutes until they become aromatic, then remove from heat and set aside.
  6. Cook the casarecce in boiling salted water according to the package directions for al dente pasta.
  7. Drain the pasta, reserving some of the cooking water, and pour it into the skillet with the pumpkin.
  8. Add some of the pasta cooking water to bind the sauce well and stir-fry over high heat for a minute.
  9. Turn off the heat, add the toasted walnuts and chopped parsley if you like, and mix well.
  10. Serve the hot casarecce and place pieces of fresh burrata on top so they melt slightly with the heat of the plate.
