Casarecce with Pistachio Pesto

Ingredients for Pistachio Pesto:

  • 150 g of shelled and unsalted pistachios
  • 50 g of grated Parmesan cheese
  • 1 clove of garlic

  • 100 ml of extra virgin olive oil
  • Salt and pepper to taste

  • 400 g of casarecce or other types of short pasta

Preparation

  3. Add the Parmesan and continue to work the mixture, gradually adding the extra virgin olive oil, until a smooth cream is obtained.

  4. Adjust the salt if necessary and set the pesto aside.

  5. Bring a pot of generously salted water to a boil for the pasta.

  6. Cook the casarecce al dente according to the package instructions.

  7. Drain the pasta, reserving some of the cooking water.

  8. Pour the casarecce into a large bowl and toss with the pistachio pesto, adding a little cooking water to make the sauce creamier if necessary.

  9. Serve the casarecce with pistachio pesto immediately.
