Uova alla carrettiera

Carrettiera-style eggs are a typically Italian dish, simple and tasty, ideal for a quick and delicious meal. Here’s how to prepare them.

Ingredients

  • 4 eggs
  • 2 cloves of garlic
  • Fresh parsley to taste
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • (Optional) Chopped chili pepper to taste

Preparation

  1. Start by finely chopping the garlic and parsley. If you’ve decided to include the chili pepper, chop it as well.
  2. Heat the oil in a non-stick pan and add the garlic (and the chili pepper, if you’re using it). Let it brown over medium heat without burning the garlic.
  3. Once the garlic is golden, crack the eggs and pour them into the pan. Season with salt and pepper.
  4. Cook the eggs for a couple of minutes to get firm egg whites and soft yolks, or cook longer if you prefer the yolks more done.
  5. One minute before taking the eggs off the heat, sprinkle the chopped parsley over them.
  6. Serve the carrettiera-style eggs immediately while hot, directly from the pan to the plate.
