Carrot Croquettes

Carrot croquettes are an excellent choice for a vegetable appetizer or a healthy and tasty snack. Below you will find the recipe to prepare them, with an Italian twist.

Ingredients

  • 500 g of carrots
  • 50 g of grated Parmesan cheese
  • 2 eggs
  • 70 g of breadcrumbs
  • Nutmeg (to taste)
  • Salt and pepper (as needed)
  • Olive oil or frying oil

Preparation

  1. Clean and peel the carrots, then cook them in salted boiling water until tender.
  2. Once cooked, mash them with a fork or pass them through a food mill until you get a homogeneous mixture.
  3. Allow the mashed carrots to cool, then add the grated Parmesan, a pinch of nutmeg, salt, pepper, and the eggs. Mix well to obtain a smooth mixture.
  4. Take some of the mixture with your hands and form small, oval or round croquettes.
  5. Coat each croquette in breadcrumbs until completely covered.
  6. Heat the olive oil in a non-stick pan or frying oil in a deeper one. When hot, fry the croquettes until they are golden and crispy on all sides.
  7. Drain the croquettes on paper towels to remove excess oil.
  8. Serve the carrot croquettes hot or warm, possibly accompanied by a yogurt-based sauce or simply with a drizzle of lemon.
