Carrot Chips

Ingredients

  • Carrots, as many as you want
  • Extra virgin olive oil or coconut oil
  • Salt
  • Spices to taste (for example, rosemary, thyme, paprika)

Preparation

  1. Preheat the oven to 200°C (392°F).
  2. Wash and peel the carrots. Using a vegetable peeler or a mandolin, slice the carrots into thin strips.
  3. Place the carrot slices in a bowl and add a little oil. Mix well so that the slices are evenly coated with oil.
  4. Arrange the carrot slices on a baking sheet lined with parchment paper, making sure they do not overlap.
  5. Sprinkle with salt and chosen spices.
  6. Bake and cook for about 10-20 minutes or until the edges of the carrots begin to curl up and become crispy. The cooking time can vary depending on the thickness of the slices, so I recommend you to monitor the chips closely to prevent them from burning.
  7. Remove the chips from the oven and let them cool for a few minutes; they will become even crispier as they cool down.
