Pancarré Sheet Pizza

The pancarré sheet pizza is a quick and simple variant of the classic pizza, great for a snack or an impromptu dinner. Here’s how to make it.

Ingredients

  • 6 slices of sandwich bread
  • 200 g of tomato passata
  • 150 g of mozzarella cheese
  • Dried oregano to taste
  • Salt to taste
  • Extra virgin olive oil to taste
  • Additional ingredients of your choice (for example, mushrooms, ham, olives, etc.)

Preparation

  1. Preheat the oven to 200 °C (392 °F).
  2. Arrange the slices of sandwich bread on a baking tray lined with parchment paper, making sure to leave a small space between each slice.
  3. Spread a thin layer of tomato passata on each slice of bread, leaving a small border around the edges.
  4. Add a pinch of salt and dried oregano on top of the tomato passata.
  5. Cut the mozzarella into thin slices or grate it, and distribute it evenly over the tomato.
  6. Add your additional ingredients on top of the mozzarella.
  7. Drizzle each “pizza” with a little extra virgin olive oil.
  8. Bake the pancarré sheet pizzas until the bread turns golden and the mozzarella melts and starts to brown, about 10-15 minutes.
  9. Remove from the oven and let cool for a few minutes before serving.

Trivia

The pancarré sheet pizza is not a real pizza, but it has been adopted in kitchens for its quick preparation and taste that, although different from traditional pizza, remains very appreciated. With this method, each slice of pancarré becomes a mini pizza that can be customized with your favorite ingredients, making the dish also fun for children who can choose what “to put on their pizza”.
