Ingredients
- 250 g of carrots
- 100 g of shelled walnuts
- 200 g of sugar
- 3 eggs
- 100 ml of vegetable oil
- 300 g of all-purpose flour
- 1 packet of baking powder
- 1 pinch of salt
- Powdered sugar (for decoration)
Preparation
- Preheat the oven to 180 °C and prepare a bundt cake pan by greasing and flouring it or lining it with parchment paper.
- Wash and peel the carrots, then grate them finely.
- Coarsely chop the walnuts, setting some aside for the final decoration.
- In a large bowl, beat the eggs with the sugar until you have a light and fluffy mixture.
- Gradually add the vegetable oil to the eggs, continuing to mix to combine well.
- Incorporate the grated carrots and chopped walnuts into the egg and sugar mixture.
- In another bowl, sift the flour with the baking powder and a pinch of salt.
- Add the dry ingredients to the wet mixture, mixing gently with a spatula or wooden spoon to avoid lumps.
