Carrot and chocolate cake

Ingredients

  • 250 grams of carrots (already cleaned weight)
  • 200 grams of sugar
  • 200 grams of almond flour or finely chopped almonds
  • 100 grams of dark chocolate
  • 3 eggs
  • 100 ml of seed oil (or coconut oil for a more exotic alternative)
  • 1 packet of baking powder
  • A pinch of salt
  • Icing sugar for decorating (optional)

Preparation

  1. Preheat the oven to 180 °C and butter and flour a cake pan.
  2. Clean and grate the carrots.
  3. Melt the chocolate in a double boiler or microwave, being careful not to burn it.
  4. In a large bowl, whip the eggs with the sugar until you have a light and fluffy mixture.
  5. Add the oil to the mixture of eggs and sugar and mix gently.
  6. Fold in the grated carrots and melted chocolate to the mixture.
  7. Add the almond flour, baking powder, and a pinch of salt, mixing carefully to avoid lumps.
  8. Pour the batter into the prepared pan and bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to complete the cooling.
  10. Once cool, you can sprinkle with icing sugar before serving.
