Ingredients
- 250 grams of carrots (already cleaned weight)
- 200 grams of sugar
- 200 grams of almond flour or finely chopped almonds
- 100 grams of dark chocolate
- 3 eggs
- 100 ml of seed oil (or coconut oil for a more exotic alternative)
- 1 packet of baking powder
- A pinch of salt
- Icing sugar for decorating (optional)
Preparation
- Preheat the oven to 180 °C and butter and flour a cake pan.
- Clean and grate the carrots.
- Melt the chocolate in a double boiler or microwave, being careful not to burn it.
- In a large bowl, whip the eggs with the sugar until you have a light and fluffy mixture.
- Add the oil to the mixture of eggs and sugar and mix gently.
- Fold in the grated carrots and melted chocolate to the mixture.
- Add the almond flour, baking powder, and a pinch of salt, mixing carefully to avoid lumps.
- Pour the batter into the prepared pan and bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to complete the cooling.
- Once cool, you can sprinkle with icing sugar before serving.
