Carrot and Apple Bundt Cake

Ingredients
- 250 g of all-purpose flour
- 150 g of granulated sugar
- 3 large eggs
- 100 ml of vegetable oil
- 3 medium carrots
- 2 medium-sized apples
- 1 packet of baking powder
- 1 pinch of salt
- 1 teaspoon of ground cinnamon (optional)
- Grated zest of 1 lemon (optional)

Preparation

Start by preheating the oven to 180 °C and greasing and flouring a bundt cake pan.

Clean and grate the carrots. Peel the apples, remove the core and cut them into small pieces or grate them.

In a large bowl, whisk the eggs with the sugar until you get a light and frothy mixture.

Gradually add the oil, without stopping stirring.

Fold in the sifted flour with the baking powder, a pinch of salt and, if desired, a teaspoon of cinnamon and the lemon zest to flavor the batter.

Add the grated carrots and apples to the batter, mixing gently to distribute them evenly.

Pour the batter into the prepared pan and level it with a spatula.

Bake for about 40 - 45 minutes or until a toothpick inserted in the center of the bundt cake comes out clean.

Once baked, take the bundt cake out of the oven and let it cool before unmolding.

Dust with powdered sugar before serving for a final touch of sweetness.
