Cardamom Tiramisu

Ingredients

  • 4 very fresh eggs (with yolks and whites separated)
  • 100 g of granulated sugar
  • 500 g of mascarpone
  • 300 g of ladyfingers
  • 1 cup of cold espresso coffee
  • 1 pod of cardamom (or 1/2 teaspoon of ground cardamom)
  • Unsweetened cocoa powder for dusting
  • Salt, a pinch

Preparation

  1. Start by infusing the cardamom into the cold espresso coffee. If you are using the pod, crush it slightly and let it infuse for at least 15 minutes, then remove the seeds and the skin. If you use the powder, you can add it directly to the coffee.
  2. Separate the yolks from the whites in the eggs. Make sure the eggs are very fresh since they will be consumed raw.
  3. Whisk the yolks with the sugar until they become light and frothy.
  4. Add the mascarpone to the whipped yolks and mix until you have a smooth mixture.
  5. In another bowl, whip the egg whites with a pinch of salt until they are firm.
  6. Gently fold the whipped whites into the mixture of mascarpone and yolks, trying not to deflate it.
  7. Take the ladyfingers and quickly dip them in the cardamom coffee, being careful not to soak them too much.
  8. Lay a layer of the soaked ladyfingers at the bottom of a baking dish.
  9. Cover the layer of ladyfingers with some of the mascarpone cream.
  10. Continue to alternate another layer of ladyfingers and finish with the cream.
  11. Put the tiramisu in the refrigerator for at least a couple of hours; it will be even better if it can rest overnight.
  12. Before serving, dust the surface with unsweetened cocoa powder.
