Caramelized Fried Fruit

Caramelized fried fruit is a dessert that lends itself to many variations. Here, I’ll provide you with a basic recipe which you can customize by choosing your favorite fruit. The version I propose might be described as an Italian adaptation with a dusting of powdered sugar and maybe a bit of Italian liqueur for flavoring.

Ingredients

  • Fruit of your choice (such as apples, bananas, pineapple, pears) cut into pieces or slices
  • 150 g of flour
  • 200 ml of cold sparkling water
  • 1 tablespoon of sugar
  • 1 pinch of salt
  • Powdered sugar to garnish
  • Oil for frying
  • Optional for the batter: a bit of Italian liqueur (such as Amaretto or Limoncello) to taste

For the caramelization:

  • 150 g of granulated sugar
  • 75 ml of water
  • Juice of 1/2 lemon

Preparation

  1. In a large bowl, mix the flour with the sugar and a pinch of salt. Gradually add the sparkling water, stirring with a whisk to prevent lumps. If desired, incorporate a bit of Italian liqueur to give an extra flavor to the batter.
  2. Heat the oil in a wide pan or a deep fryer to 180 °C.
  3. Dip the fruit pieces in the batter making sure they are completely covered.
  4. Fry the battered fruit until it becomes golden and crispy. Do not overload the fryer and fry the fruit in small batches at a time for even cooking.
  5. Drain it on paper towels to remove excess oil.
  6. To caramelize the fruit, dissolve the granulated sugar with water and lemon juice in a pan, until you get an amber caramel. Be careful not to burn the sugar.
  7. Dip the fried fruit into the caramel or drizzle with the caramel using a spoon. Work quickly as the caramel hardens rapidly.
  8. Arrange the fruit on a plate or tray lined with parchment paper and let it cool.

Curiosity

Fried caramelized fruit is particularly popular in Asia, especially in China, where it is often served in restaurants specializing in Chinese cuisine. The version with the addition of Italian liqueur is my customization that adds a touch of flavor and originality to the dish.
