Start with the shortcrust pastry: in a large bowl, combine the flour and cold butter, working quickly with the tips of your fingers to obtain a sandy mixture. Add the icing sugar, lemon zest, egg, and yolk. Knead briefly until you have a smooth dough. Wrap the pastry in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

In the meantime, prepare the caramelized figs. Cut the figs in half or into quarters depending on the size. In a wide pan, dissolve the sugar with water and lemon juice to create a syrup. Add the figs and let them caramelize over medium-low heat until the syrup has thickened and the figs are well coated with caramel. Set aside to cool.

In a bowl, mix the ricotta with the icing sugar and vanilla extract until you have a smooth and even cream. If you want an extra touch, you can add a little limoncello or another citrus liquor.
