Caramelized Fig Tart

I can guide you in preparing a delicious Caramelized Fig Tart. This dessert combines the sweetness of caramelized figs with a crispy shortcrust pastry base. Here is the recipe.

Ingredients for the shortcrust pastry:

  • 250 g of type 00 flour
  • 125 g of cold butter, cubed
  • 100 g of icing sugar
  • 1 large egg
  • 1 yolk
  • Grated zest of half a lemon

Ingredients for the filling and caramelized figs:

  • 8-10 fresh figs
  • 150 g of granulated sugar
  • 50 ml of water
  • Juice of 1 lemon
  • 250 g of ricotta cheese
  • 50 g of icing sugar
  • 1 teaspoon of vanilla extract

Preparation

  1. Start with the shortcrust pastry: in a large bowl, combine the flour and cold butter, working quickly with the tips of your fingers to obtain a sandy mixture. Add the icing sugar, lemon zest, egg, and yolk. Knead briefly until you have a smooth dough. Wrap the pastry in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

  2. In the meantime, prepare the caramelized figs. Cut the figs in half or into quarters depending on the size. In a wide pan, dissolve the sugar with water and lemon juice to create a syrup. Add the figs and let them caramelize over medium-low heat until the syrup has thickened and the figs are well coated with caramel. Set aside to cool.

  3. In a bowl, mix the ricotta with the icing sugar and vanilla extract until you have a smooth and even cream. If you want an extra touch, you can add a little limoncello or another citrus liquor.

  4. Preheat the oven to 180 °C (350 °F). Roll out the shortcrust pastry in an even layer and line a previously buttered and floured tart pan with it. Prick the bottom with a fork.

  5. Pour the ricotta cream over the pastry base and spread it evenly. Arrange the caramelized figs on top.

  6. Bake the tart for about 30-35 minutes, or until the shortcrust pastry is golden and the ricotta has set slightly.

  7. Allow the tart to cool before serving.
