Whimsical Tuna Fusilli

Whimsical Tuna Fusilli is a simple and tasty dish that can be prepared in just a few minutes. Here is how to do it.

Ingredients

  • 320g of fusilli
  • 200g of canned tuna, well drained
  • 10 cherry tomatoes
  • 2 tablespoons of salted capers
  • 100g of pitted black olives
  • 1 clove of garlic
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Crushed red chili pepper (optional)
  • Chopped fresh parsley (for garnish)

Preparation

  1. Bring a pot of salted water to a boil to cook the fusilli.
  2. Meanwhile, cut the cherry tomatoes in half or in quarters, depending on your preference.
  3. Rinse the capers under running water to remove the excess salt.
  4. In a large pan, heat the extra virgin olive oil with the peeled garlic clove (which you will remove as soon as it’s golden). Add the cherry tomatoes and cook for a few minutes over medium heat.
  5. Add the capers, olives, and chili pepper (if you like a bit of spice). Let it flavor for a couple of minutes.
  6. Add the drained tuna and cook for a few more minutes, just enough time to blend the flavors.
  7. By now, the fusilli should be cooked al dente. Drain the pasta and reserve some cooking water.
  8. Transfer the fusilli into the pan with the tuna and tomato sauce, if necessary add a little of the reserved cooking water to better cream the sauce.
  9. Remove the pan from the heat and add the chopped fresh parsley.
  10. Serve the fusilli hot.

Trivia

This dish can be enriched with some fresh basil leaves or, for a citrus note, with the grated zest of a lemon.
