Caprese Tartlets

Caprese tartlets are a miniature version of the more famous Caprese cake, a typical chocolate and almond cake from the island of Capri in Italy. Here is the recipe to prepare delicious Italian-style tartlets:

Ingredients

  • 150 g of peeled almonds
  • 150 g of sugar
  • 100 g of soft butter
  • 100 g of dark chocolate
  • 40 g of wheat flour
  • 3 eggs
  • 1/2 sachet of baking powder
  • Powdered sugar (for decoration)
  • Butter and flour for the molds

Preparation

  1. Preheat the oven to 180 °C.
  2. Finely chop the almonds in a mixer although they should not become like flour; a slightly grainy consistency is perfect.
  3. Melt the dark chocolate in a double boiler or, if you prefer, you can do it in the microwave, being careful not to heat it too much.
  4. Whisk the soft butter with the sugar until you have a frothy mixture.
  5. Incorporate one egg at a time into the butter and sugar mixture, making sure that each egg is well mixed before adding the next.
  6. Add the chopped almonds to the mixture, then the melted chocolate and blend well.
  7. Finally, gently incorporate the sifted flour and baking powder so as not to deflate the mixture.
  8. Butter and flour the tartlet molds (or you can use paper liners) and fill each one about three-quarters full with the batter.
  9. Bake the tartlets in the oven for about 15-20 minutes or until the surface is slightly cracked but the inside is still soft.
  10. Remove the tartlets from the oven and let them cool before dusting them with powdered sugar.

Once cooled, the Caprese tartlets can be served. This sweet is excellent to pair with a dessert wine, such as a Passito di Pantelleria, whose aromatic notes perfectly match the intense flavors of the chocolate and almonds.

The Caprese cake was presumably born by mistake, when a pastry chef forgot to add flour to his chocolate cake recipe, creating a dessert that was moist and densely rich that has become a beloved classic. The Caprese tartlets are perfect for tasting the essence of this dessert in an individual version.
