Caprese Omelette

Ingredients

  • 3 large eggs
  • 1 ripe tomato

Preparation

  1. Start by dicing the tomato and cubing the mozzarella into similar sizes.

  3. Heat a drizzle of extra virgin olive oil in a pan over medium-high heat.
  4. Pour the eggs into the pan and reduce the heat slightly.
