Caprese Cake
17/11/2023Caprese Cake is a classic of Italian pastry, especially from the beautiful island of Capri. It is a chocolate and almond cake, flourless, deliciously moist inside. Here’s how to prepare it:
Ingredients
- 200 g of dark chocolate
- 200 g of butter
- 200 g of powdered sugar
- 200 g of finely chopped almonds (or almond flour)
- 5 eggs
- Powdered sugar for decoration
Preparation
- Preheat the oven to 170 °C.
- Melt the chocolate in a double boiler with the butter.
- Remove from heat and let it cool slightly.
- In the meantime, separate the yolks from the whites and whisk the latter until stiff.
- Add the sugar to the yolks and beat them until you get a light and frothy mixture.
- Gently fold the melted chocolate and butter into the yolks, mixing with a spatula from the bottom up.
- Add the finely chopped almonds and mix well.
- Finally, gently fold in the whipped egg whites, taking care not to deflate them.
- Pour the mixture into a buttered and floured cake tin (or lined with parchment paper) and bake in the oven for about 40-50 minutes. The Caprese Cake should remain moist in the center, so do not overcook.
- Allow to cool completely before dusting with powdered sugar.

Caprese Cake was born by mistake when a pastry chef forgot to add flour to the cake. The result was such a success that the recipe became an unmissable classic. Thanks to this fortunate mistake, it is also a delight for those following a gluten-free diet.
