Caprese Cake

Caprese Cake is a classic of Italian pastry, especially from the beautiful island of Capri. It is a chocolate and almond cake, flourless, deliciously moist inside. Here’s how to prepare it:

Ingredients

  • 200 g of dark chocolate
  • 200 g of butter
  • 200 g of powdered sugar
  • 200 g of finely chopped almonds (or almond flour)
  • 5 eggs
  • Powdered sugar for decoration

Preparation

  1. Preheat the oven to 170 °C.
  2. Melt the chocolate in a double boiler with the butter.
  3. Remove from heat and let it cool slightly.
  4. In the meantime, separate the yolks from the whites and whisk the latter until stiff.
  5. Add the sugar to the yolks and beat them until you get a light and frothy mixture.
  6. Gently fold the melted chocolate and butter into the yolks, mixing with a spatula from the bottom up.
  7. Add the finely chopped almonds and mix well.
  8. Finally, gently fold in the whipped egg whites, taking care not to deflate them.
  9. Pour the mixture into a buttered and floured cake tin (or lined with parchment paper) and bake in the oven for about 40-50 minutes. The Caprese Cake should remain moist in the center, so do not overcook.
  10. Allow to cool completely before dusting with powdered sugar.

Fun Fact

Caprese Cake was born by mistake when a pastry chef forgot to add flour to the cake. The result was such a success that the recipe became an unmissable classic. Thanks to this fortunate mistake, it is also a delight for those following a gluten-free diet.
