Bruschetta Caprese

Ingredients
- Slices of homemade bread or baguette
- Ripe tomatoes
- Buffalo mozzarella
- Fresh basil
- Garlic
- Extra virgin olive oil
- Salt
- Pepper (optional)
Preparation
- Take the slices of bread and toast them on a grill, in a non-stick pan, or in the oven until they become crisp and golden.
- Lightly rub one side of the bruschetta with a halved garlic clove.
- Wash and dry the tomatoes. Dice them and put them in a bowl.
- Cut the buffalo mozzarella into cubes and add it to the tomatoes.
- Tear some fresh basil leaves with your hands, insert them into the bowl with the tomatoes and mozzarella.
- Season everything with salt, pepper (if you like), and a generous drizzle of extra virgin olive oil. Gently mix.
- Spread the mixture of tomatoes, mozzarella, and basil over the toasted bread slices.
- If desired, you can finish with an additional sprinkle of fresh basil and a drizzle of extra virgin olive oil before serving.
