Ingredients

  • Slices of homemade bread or baguette
  • Ripe tomatoes
  • Buffalo mozzarella
  • Fresh basil
  • Garlic
  • Extra virgin olive oil
  • Salt
  • Pepper (optional)

Preparation

  1. Take the slices of bread and toast them on a grill, in a non-stick pan, or in the oven until they become crisp and golden.
  2. Lightly rub one side of the bruschetta with a halved garlic clove.
  3. Wash and dry the tomatoes. Dice them and put them in a bowl.
  4. Cut the buffalo mozzarella into cubes and add it to the tomatoes.
  5. Tear some fresh basil leaves with your hands, insert them into the bowl with the tomatoes and mozzarella.
  6. Season everything with salt, pepper (if you like), and a generous drizzle of extra virgin olive oil. Gently mix.
  7. Spread the mixture of tomatoes, mozzarella, and basil over the toasted bread slices.
  8. If desired, you can finish with an additional sprinkle of fresh basil and a drizzle of extra virgin olive oil before serving.
