Caprese

The Caprese is a world-renowned Italian appetizer, originating from the island of Capri. It’s a simple dish that showcases the colors of the Italian flag and relies on the freshness of the ingredients. Here’s how to prepare it:

Ingredients

  • Ripe tomatoes (preferably beefsteak or San Marzano type)
  • Campania buffalo mozzarella PDO
  • Fresh basil
  • Extra virgin olive oil
  • Salt
  • Pepper (optional)

Preparation

  1. Slice the tomatoes into rounds about 1 cm thick.
  2. Slice the buffalo mozzarella in the same way.
  3. Arrange slices of tomato and mozzarella on a serving plate, alternating them to create a tower effect or parallel rows.
  4. Insert leaves of fresh basil between each layer.
  5. Season with a generous drizzle of extra virgin olive oil, a pinch of salt, and if desired, a sprinkle of freshly ground black pepper.
  6. Let the Caprese rest for a few minutes before serving, to allow the flavors to meld.

Curiosity

Despite its simplicity, Caprese has won over many palates thanks to the harmony of its flavors. The secret to a good Caprese lies in the quality of the ingredients: well-ripened tomatoes, fresh mozzarella, and high-quality extra virgin olive oil make the difference. Additionally, traditional Caprese does not use balsamic vinegar, but if you prefer a touch of acidity, you can drizzle a little IGP balsamic vinegar of Modena over the tomato and mozzarella slices.
