Plumcake cappuccino
17/11/2023The cappuccino plumcake is a delicious twist on the traditional plumcake, combining the bold flavor of coffee with the sweetness of cream.
Ingredients
- 200 g of all-purpose flour
- 200 g of brown sugar
- 100 g of soft butter
- 3 medium eggs
- 100 ml of cold espresso coffee
- 1 packet of baking powder
- 100 ml of whole milk
- Cocoa powder for dusting
- Salt, a pinch
Preparation
- Prepare the espresso coffee and let it cool down.
- Meanwhile, beat the eggs with the brown sugar until the mixture is light and fluffy.
- Add the soft butter and continue to beat until it’s perfectly blended into the mixture.
- Gradually fold in the flour, previously sifted with the baking powder, alternating with the milk and cold coffee to avoid lumps.
- Add a pinch of salt and mix until the dough is homogeneous.
- Pour the mixture into a previously buttered and floured plumcake mold.
- Bake in a preheated oven at 180 °C for about 40 minutes, or until a toothpick inserted in the center of the plumcake comes out dry.
- Remove from the oven and let it cool completely before dusting with cocoa powder to create the “cappuccino” effect.
Curiosity
The cappuccino plumcake is perfect for breakfast or as a snack, obviously accompanied by a good coffee or a real cappuccino. The addition of coffee to the batter not only gives flavor but also a characteristic marbled color to the cake.
