Plumcake cappuccino

The cappuccino plumcake is a delicious twist on the traditional plumcake, combining the bold flavor of coffee with the sweetness of cream.

Ingredients

  • 200 g of all-purpose flour
  • 200 g of brown sugar
  • 100 g of soft butter
  • 3 medium eggs
  • 100 ml of cold espresso coffee
  • 1 packet of baking powder
  • 100 ml of whole milk
  • Cocoa powder for dusting
  • Salt, a pinch

Preparation

  1. Prepare the espresso coffee and let it cool down.
  2. Meanwhile, beat the eggs with the brown sugar until the mixture is light and fluffy.
  3. Add the soft butter and continue to beat until it’s perfectly blended into the mixture.
  4. Gradually fold in the flour, previously sifted with the baking powder, alternating with the milk and cold coffee to avoid lumps.
  5. Add a pinch of salt and mix until the dough is homogeneous.
  6. Pour the mixture into a previously buttered and floured plumcake mold.
  7. Bake in a preheated oven at 180 °C for about 40 minutes, or until a toothpick inserted in the center of the plumcake comes out dry.
  8. Remove from the oven and let it cool completely before dusting with cocoa powder to create the “cappuccino” effect.

Curiosity

The cappuccino plumcake is perfect for breakfast or as a snack, obviously accompanied by a good coffee or a real cappuccino. The addition of coffee to the batter not only gives flavor but also a characteristic marbled color to the cake.
