Cappuccino muffin
17/11/2023Cappuccino muffins are a delicious variation of the classic muffins that combine the flavor of coffee with that of milk, just like the famous Italian beverage. Here is the recipe to prepare them.
Ingredients
- 250 g of flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- A pinch of salt
- 100 g of sugar
- 1 large egg
- 240 ml of milk
- 60 ml of seed oil (or melted butter)
- 1 teaspoon of vanilla extract (optional)
- 2 tablespoons of cocoa powder
- 1 or 2 teaspoons of instant coffee (adjust depending on the desired intensity)
- 100 g of dark chocolate, chopped (optional to add chocolate chunks)
For the cappuccino frosting (optional):
- 100 g of cream cheese (like Philadelphia)
- 50 g of powdered sugar
- 1 teaspoon of instant coffee dissolved in 1 tablespoon of hot water
Preparation
- Preheat the oven to 175 °C and prepare a muffin tin with paper liners.
- In a bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, sugar, and cocoa powder.
- In another bowl, beat the egg with the milk, oil, vanilla extract, and instant coffee until you have a homogeneous mixture.
- Combine the wet ingredients with the dry ingredients and mix until you have a smooth dough. If desired, add the chopped dark chocolate.
- Distribute the dough in the liners, filling them about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool before removing them from the tin.
For the cappuccino frosting:
- Mix the cream cheese with the powdered sugar and dissolved instant coffee until smooth and homogeneous.
- Spread the frosting on the cooled muffins.
