Capers Fritters

Ingredients

  • 100 g of salted capers
  • 150 g of flour
  • 1 egg
  • 150 ml of cold sparkling water
  • Salt to taste
  • Pepper to taste (optional)
  • Oil for frying

Preparation

  1. First, rinse the capers under running water to remove the excess salt. If they are very large, you can also coarsely chop them. Drain them well and pat dry with kitchen paper.

  2. In a bowl, combine the flour and a pinch of salt (be careful not to overdo it, the capers are already salty). Add the egg and mix well with a whisk to prevent lumps.

  3. Gradually pour the sparkling water, continuing to mix, until you get a smooth and homogeneous batter. If you love bolder flavors, you can also add a pinch of pepper.

  4. Incorporate the capers into the batter and mix gently.

  5. Heat plenty of oil in a frying pan, and when it has reached the right temperature (you can test it with a teaspoon of the batter; if a fritter forms immediately, the oil is ready), scoop out portions of the batter with the capers with a spoon and fry them until they become golden and crispy.

  6. Remove the fritters with a slotted spoon and let them dry on kitchen paper to remove excess oil.

  7. Serve hot, accompanied by a spritz of lemon if you desire an extra touch of freshness.

This appetizer pairs beautifully with an aperitif and can be an unusual way to introduce capers into a meal. Furthermore, you can experiment with adding aromatic herbs to the batter to vary the flavor.
