Camille

Camille are soft little cakes made of carrots, almonds, and orange, very popular in Italy. Here is the recipe.

Ingredients

  • 200 g of carrots
  • 100 g of peeled almonds
  • 100 g of sugar
  • 100 g of all-purpose flour
  • 2 eggs
  • The grated zest of 1 orange
  • 1 packet of baking powder
  • A pinch of salt

Preparation

  1. Start by washing, peeling, and finely grating the carrots.
  2. Also finely chop the almonds in a mixer.
  3. In a bowl, beat the eggs with the sugar until the mixture becomes light and fluffy.
  4. Add to the egg and sugar mixture the grated carrots, grated orange zest, and ground almonds. Mix well.
  5. Then add the sifted flour, baking powder, and a pinch of salt, blending carefully to avoid lumps.
  6. Prepare cupcake or cake molds and fill them three-quarters full with the batter.
  7. Bake in a preheated oven at 180 °C for about 20 minutes, or until the Camille are golden brown and well risen.
  8. Let cool and, if you wish, you can dust them with powdered sugar before serving.

Camille gained great popularity in Italy thanks to a well-known brand of baked products that marketed them as packaged snacks. However, homemade Camille have a distinctive flavor and freshness that allow you to fully appreciate the goodness of simple but nutritious ingredients such as carrots and almonds.
