Camembert and Bordeaux Onion Galettes
17/11/2023I can provide you with a recipe to prepare delicious Camembert and Bordeaux Onion Galettes with an Italian touch. Remember that the galette is a specialty typical of French cuisine, but I will not fail to add that pinch of Italianity that can make a difference.
Ingredients
- 1 roll of shortcrust pastry (or puff pastry if you prefer a crisper texture)
- 2 medium red onions
- 50 ml of Bordeaux red wine (or another red wine of your choice)
- 250 g of Camembert
- 2 tablespoons of extra virgin olive oil (for an Italian touch)
- 1 tablespoon of brown sugar
- Salt and pepper to taste
- Fresh or dried thyme to give a more Mediterranean aroma
- Chopped walnuts to add crunch and flavor (optional)
Preparation
- Preheat the oven to 180 °C (350 °F).
- Roll out the shortcrust pastry and cut it into circles of about 15 cm in diameter. Arrange them on a baking tray lined with parchment paper.
- In a skillet, heat the extra virgin olive oil and add the onions, cut into slices. Cook over medium heat until they become translucent.
- Add the brown sugar to the onions and let them caramelize slightly. Then, pour in the red wine and let it evaporate on high heat until reduced. Season with salt and pepper.
- Cut the Camembert into thin slices and place them in the center of each pastry circle, leaving a free edge of about 2 cm.
- Add the red wine onions on top of the Camembert.
- Sprinkle with thyme and chopped walnuts if you wish to add them.
- Fold the edges of the pastry inward, slightly folding them over the filling.
- Bake in the oven for about 20-25 minutes, or until the galettes are golden brown and crisp.
- Allow to cool slightly before serving.
Trivia
The galette is a dish that lends itself to numerous interpretations and fillings. In France, it is common to find them with typical local ingredients such as gruyère or speck. In Italy, you might experiment by adding a touch of gorgonzola or prosciutto crudo to vary the flavors.
