Preparation

  1. Start by cleaning the calamari: remove the head, innards, and cartilaginous quill inside the body. Rinse them well under running water, peeling off the outer skin if necessary. Cut the calamari bodies into rings about 1-2 cm thick.
  2. Dry the calamari rings thoroughly with paper towels.
  3. Place the flour on a plate and lightly dust the calamari rings, making sure to shake off any excess flour.
  4. In the meantime, wash the potatoes and cut them into sticks or thin slices, depending on your preference. Make sure they are well dried.
  5. Heat a generous amount of olive oil in a pan or deep fryer until it reaches a temperature of about 180 °C.
  6. Fry the potatoes until they are golden and crispy. Once fried, transfer them to paper towels to remove excess oil and season them lightly with salt.
