Pasta calamarata with squid

Calamarata pasta with squid is a delicious dish that celebrates the flavors of the sea. Here is the recipe:

Ingredients

  • 320 grams of calamarata pasta
  • 400 grams of squid, cleaned and cut into rings
  • 2 cloves of garlic
  • 200 grams of cherry tomatoes
  • Chopped fresh parsley to taste
  • Extra virgin olive oil to taste
  • Salt to taste
  • Chili pepper (optional)

Preparation

  1. In a wide pan, heat the extra virgin olive oil and sauté the garlic cloves until they turn golden. If you like a spicy touch, you can add some chili pepper at this stage.

  2. Add the squid rings and sauté for a few minutes until they become slightly golden. Be careful not to overcook them to avoid them becoming rubbery.

  3. Add the cherry tomatoes cut in half, adjust with salt and let cook for about 10 minutes, until the tomatoes start to break down and create a light sauce.

  4. In the meantime, bring a pot of salted water to a boil and cook the calamarata pasta following the instructions on the package to obtain an al dente texture.

  5. Drain the pasta and pour it into the pan with the squid and cherry tomatoes. Mix well to flavor the pasta with the sauce.

  6. Finish with chopped fresh parsley and serve immediately.

For an even more maritime and Italian touch, you can also add some capers and Taggiasca olives towards the end of cooking the tomatoes.
