Yogurt and Apple Cake

The yogurt and apple cake is a simple and tasty dessert, perfect for breakfast or as a snack. Here’s how to make it.

Ingredients

  • 2 or 3 apples (depending on size)
  • 250 g of all-purpose flour
  • 200 g of sugar
  • 125 g of plain white yogurt (natural or vanilla flavored)
  • 3 eggs
  • 100 ml of seed oil (sunflower or corn)
  • 1 sachet of baking powder
  • 1 lemon (zest grated)
  • A pinch of salt
  • Icing sugar (for decoration, optional)
  • Ground cinnamon (optional)

Preparation

  1. Preheat the oven to 180 °C and butter and flour a cake tin, or line it with baking paper.
  2. Peel the apples, remove the core and cut them into thin slices or cubes, as you prefer. If you like, you can sprinkle some cinnamon on the apples for a more spiced flavor.
  3. In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy.
  4. Add the yogurt and seed oil, continuing to stir to blend the ingredients.
  5. Fold in the sifted flour with the baking powder, the grated zest of the lemon, and a pinch of salt, mixing gently to avoid lumps.
  6. Add the apple slices or cubes to the batter and stir gently to distribute them evenly.
  7. Pour the batter into the prepared tin and level the surface with a spatula.
  8. Bake the cake for about 40-45 minutes, or until a skewer inserted in the center comes out clean.
  9. Let the cake cool in the tin for a few minutes, then transfer it to a wire rack to cool completely.
  10. Before serving, dust with icing sugar for an extra touch of sweetness and decoration.
