Cake with Hazelnut Wafer Cream

  2. Then add the previously sifted flour with baking powder and a pinch of salt, and mix until smooth and lump-free.
  3. Pour the mixture into a previously buttered and floured cake pan, level it well and bake at 180°C (356°F) for about 20-25 minutes or until the surface is golden brown and a skewer inserted in the center comes out clean.
  4. In the meantime, prepare the hazelnut wafer cream. Roughly chop the wafers and set them aside.
  5. In a bowl, work the mascarpone with the fresh cream, add the vanilla extract and icing sugar (adjust the quantity according to your taste).
  6. Once the cake base has cooled, cut it horizontally to obtain two layers. Spread a generous amount of mascarpone cream over the first layer and sprinkle with half of the chopped hazelnut wafers.
  7. Place the second layer on top and cover the entire cake with an even layer of cream, then decorate the top with the rest of the chopped wafers and a dusting of cocoa powder.
  8. Let it cool in the fridge for at least one hour before serving to allow the cream to firm up.
