Corn Flour Cake

Ingredients

  • 200g of corn flour
  • 150g of sugar
  • 100g of all-purpose flour
  • 100g of soft butter
  • 3 eggs
  • 1 packet of baking powder
  • Grated zest of 1 lemon (optional for flavoring)
  • A pinch of salt
  • Milk as needed (if the mixture is too thick)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, beat the eggs with the sugar until you have a frothy and light mixture.
  3. Add the soft butter and continue to beat until it is well combined.
  4. Gradually incorporate the sifted corn flour and all-purpose flour, alternating them to avoid lumps, and also add the pinch of salt.
  5. If you wish to have a lemon aroma, add the grated lemon zest and the baking powder, mixing gently until you get a smooth dough. If necessary, add a bit of milk to reach the desired consistency; the mixture should be soft but not liquid.
  6. Pour the mixture into a previously greased and floured cake pan, or lined with parchment paper.
  7. Bake the cake at 180 °C for about 40 minutes or until it is golden and a toothpick inserted in the center comes out clean.
  8. Remove the cake from the oven and let it cool before removing it from the cake pan.

Once baked and cooled, the corn flour cake can be dusted with icing sugar for a sweeter final touch, or accompanied by a berry sauce or a simple English cream.
